i have set up a wifi extender with RELAYD with 2 RUT360 routers to extend internet coverage, its working but every router has its own SSID, can it be joined to one SSID?

Yes, the same SSID can be used on both routers, but there are a few considerations to keep in mind:
If the coverage area of these devices overlap, they should be configured to use different WiFi channels;
Authentification, password, encryption, and all other settings should be identical between these two devices;
They should both be on the same network and use the same DHCP server (one of them configured as an access point)
Fast roaming can be configured for faster authentication between these two access points;

What do i gain with fast roaming? I mainly want this for Voice ovrr WIFI, when i walk across the production that i can speak on my mobile phone - will there be a problem when it connects from RUT1 to RUT2?
Also i have now one AP and one Client woth Relayd, should now both be Accsss points?

No, fast roaming shortens the time it takes to migrate from one access point to another by shortening the authentication sequence from 4 steps to only 2. However, for this to work, both access points need to be on the same mobility domain, as well as adhere to other requirements outlined in my previous comment.
If you are referring to the Network → Wireless page, then yes, both devices will need to be configured as access points. What I meant in my previous comment, is that only one device should actually do the routing and have a DHCP server, and another will act as a simple access point.

One question that i have, must then the AP and the gateway be connected by cable?

It’s possible to configure both ways, but I’d recommend using a wired connection.
For a wireless connection, you’d first need to configure the router as a WiFi client with Relay, and only then the access point.

What I mean, is that the device should be configured as per article linked above.
First the device should be bridged with the default gateway of your LAN, and then the WiFi access point instance can be configured in Network → Wireless page.
Keep in mind, that when the device is configured with Relayd, it will not be reachable using it’s LAN IP, and you will only be able to reach it using the Static IP address or the DHCP IP address assigned by the RUT360 that is acting as a default gateway.
