What single-user SIM card is best for the RUT241 in the US?

I want to run an automatic bird monitor in a remote area with marginal coverage by AT&T, T-Mobile and Verizon (none is really better than the other -all marginal 2-3 bars). The monitor generates about 2 GB data per day and occasionally when in the field, I might want to connect other devices: Emlid GNSS, DJI drone, cell phones, laptops.

What would be the best SIM card to use as a single user (no other sims needed)? Would a flatrate or a prepaid card be better? I currently looking at the IoTDataWorks Extreme Unlimited 750 kbps Plan and the Eiotclub USA Prepaid 5G SIM Card Data - Seamlessly Connect Your IoT Devices with Supported Verizon, AT&T and T-Mobile - Sim card / 24GB | 360DAYS. My budget is $150 per year.
