The only way this is an issue if it was something that happened on the last update, this setup has been flawless for over half a year. So something has changed recently to cause it.
The firmwares are both updated.

One more idea that I have - could you navigate to Network → WAN, edit the mob1s1a1 (SIM1) interface and change the PDP type to IPv4-only?
We’ve had some reports that EE provides an IPv6-only address by default when PDP type IPv4/v6 is used, and that could cause some accessibility issues to other services online, as IPv6 is not yet supported by all providers.
MTU can also be lowered in the same menu (Advanced settings tab), although we haven’t had any reports of MTU issues on EE network.
