For this one, yes, if PoE is not needed for your requirement, then you can use a custom UTP cable where wires for pins 4, 5, 7, and 8 are not connected.
As you are already aware, the mentioned pins are used for PoE. Not including the wires for it (Blues and Browns) will make sure that the electricity will not flow
Just make sure that the cable is crimped properly to ensure that you will have stable connectivity.
