Hi, this router is my personal router, and my first. I followed the setup wizard but do not know how to optimise my setup or configure it for encrypted DNS for IPv4 and IPv6. Currently my 4G and 5G lights are flashing on my router? I only use an EE 5G sim as I have no access to fibre broadband.

First of all, please check if you have the latest firmware version installed on the device. You can download firmware from here.
Secondly, what is the status of the mobile connection in Status → Network → Mobile? Before sharing this information, please hide sensitive information such as IMEI, IMSI, etc.
Regarding encrypted DNS. This would require some additional effort to make this work. I suggest you take a look at the previous forum topics here and here.
