Hi, I have 1 device that’s currently in a saturated zone, the signal is very good, each of the 3 bands available (b2,b7,b28). The problem that I have that’s seems to be a saturated zone and I don’t know what to do, I’ve tried everything that’s in my knowledge… please tell me if there something that can be done, usually it’s around 8 pm that the device speeds get down

If place is saturated is nothing you can do, cellular tower working at full speed 
I would try to use different operator SIM cards, maybe they will provide better internet speed.

Sadly, the only way so get better speeds is to get better devices.
The higher the 4G category, the better these devices are able get available resources in the air time so that might help.
5G also has some advancements that allow to get more out of the tower for both the tower and the router as 5G introduced a lot of mechanisms to deal with crowded areas to be able to serve more and more data.
Only other option is to try different operators as Lemondude mentioned
What about putting a higher antenna? Will it make a difference? Another question that I have is that sometimes I have noticed that traffic is directed through different servers… is there any way to lock one specific ?
Maybee could help, as maybe less of your packet would get corrupted while on the way to the tower, but not a guarantee, as from what I understand signal levels are not an issue.
Regarding server lock I don’t really know what are you talking about
